Nice Rice Tuna Pie Recipe
Oh so easy and oh so delicious! The original recipe calls for a 55 minute bake time but I find it's pretty well done after about 35 mins (depends on your oven), and prep time is quicker if you use leftover rice.

Ingredients
  • Crust:
  • 2 cups rice
  • 2 Tbsp butter, melted
  • 2 Tbsp minced red onion
  • 1/4 tsp marjoram
  • 1 Tbsp minced flat-leaf parsley
  • 1 egg, lightly beaten
  • Filling:
  • 1 x 7 oz can tuna, drained*
  • 3 eggs, beaten
  • 1 cup whole milk
  • 1 cup shredded Swiss cheese
  • 1/2 cup fresh or frozen peas
  • 1/4 tsp salt
  • 1 tsp freshly ground pepper
  • 2 tsp minced flat-leaf parsley
  • 1/4 tsp marjoram
  • 1/2 cup shredded aged Cheddar cheese
  • *Variations: see directions

Directions
  1. For crust, cook rice and allow to cool. Saute onion in butter until translucent. Combine with rice and remaining crust ingredients and press into a pie shell as for pastry.
  2. Preheat oven to 350F.
  3. Lightly mix tuna with peas and spread evenly over rice crust.
  4. Combine eggs with milk, Swiss cheese and seasonings; pour over tuna. Top with Cheddar.
  5. Bake 55 minutes (according to original recipe; as noted, I find it cooks in about 35 minutes or so).
  6. Variations: try with leftover cooked chicken or turkey, shredded, chopped ham or shrimp in place of tuna.
