How to make it

  • Put yeast in 1 cup warm water, along with sugar. Stir to dissolve and let get foamy about 10 mins.
  • Add oil and salt at this time.
  • Add to mixing bowl for stand mixer. Attach dough hook.
  • Add one cup of flour at a time and start mixing on low speed.
  • Once about 1/2 of the flour is in add your parmesan/oregano seasoning, making sure it mixes in well. Once it is a soft, smooth dough ball, remove from mixer.
  • Place in oiled bowl and cover with plastic wrap for about 30-60mins
  • While dough is rising prep toppings.
  • Toss raw shrimp w/ drizzle of oil and seasoned salt. Sautee for a couple minutes over medium heat until pink throughout.
  • Chop when cooled and set aside.
  • Slice mushrooms, rstd red peppers, and chop tomatoes.
  • Shredd mozzarella.( I think it works better for pizza to shred your self as it melts better)
  • Mince or process garlic, oil, and 1/2 of basil bunch. This will be your sauce.
  • Preheat oven to 450 degrees. Place pizza stone in oven at this time.
  • Once dough has risen, divide in two and roll out for pizza pan.
  • I dust the pan and the bottom of the dough with cornmeal.
  • Poke holes with fork in top of pizza.
  • Par bake the pizza on a regular pan for about4-5 mins, making sure it does not bubble up.
  • Remove from oven and brush with garlic&basil sauce.
  • Add all 3 cheeses, then shrimp, rstd reds, mushrooms, and tomatoes.
  • Top with fresh basil leaves.
  • Carefully pull pizza stone out on rack and sprinkle with a little cornmeal now, as to not burn it.
  • At this time transfer pizza to a preheated pizza stone. This is KEY to get a wonderfully crisp bottom.
  • Cook about 10 mins or until top is melted and crust is golden.
  • Enjoy!!
