Sisters Chicken Spaghetti Recipe

Sisters Chicken Spaghetti Recipe
This is one of my favorite dishes and my kids love it! It also freezes well and makes a great dish to take to a sick friend along with a bag of salad and loaf of french bread. I always serve with a salad and french bread. Enjoy~

Ingredients
  • 2 lbs of boneless boiled chicken
  • 1 can Rotel tomatoes and chiles
  • 1 can of tomato soup
  • 1 lb of Velvetta Cheese
  • 1/2 cup milk
  • 1 lb box of spaghetti
  • 1 Tsp Italian Seasoning
  • Salt and Pepper to taste

Directions
  1. Boil boneless chicken until completely done (I use frozen chicken breast, usually 4-5 is enough) and set aside to cool so you can cut up into small pieces.
  2. Boil spaghetti in leftover chicken broth until tender. Drain and put back in same pot. Add milk, tomato soup, Rotel tomatoes, italian seasongs, salt, pepper and cheese (cut into small cubes). Heat on medium-low heat covered until cheese melts, stirring constantly to avoid sticking. Garnish with shreeded cheese or parmesan cheese. Serves a family of 5 with plenty of leftovers.
  3. You may substitute frozen chicken with precooked diced chicken. I prefer to cook my own to reserve the broth for the spaghetti.
