How to make it

  • Beat together cream cheese, 2/3 cup of sugar and 1/2 tsp vanilla until fluffy.
  • Gradually add the egg and beat until smooth.
  • Spray a 9" pie plate with nonstick spray and pour in cream cheese mixture. Bake at 350 F for 30-35 minutes or until puffy and light brown around the edges.
  • Cool on wire rack for 10 minutes.
  • Combine sour cream, remaining sugar and vanilla and spread over cheesecake. Bake at 350 F for 15 minutes longer.
  • Cool completely on a wire rack and then refrigerate.
  • At serving time, top each slice with 2 tbsp cherry pie filling.
