Low Fat Cheesecake

- 2 8-ounces pkgs fat-free cream cheese shopping list
- 2/3 cup plus 3 tbsp sugar, divided shopping list
- 1 1/2 tsp vanilla extract, divided shopping list
- 3/4 cup egg substitute or 3 eggs shopping list
- 1 cup fat-free sour cream shopping list
- 1 cup reduced sugar cherry pie filling shopping list
How to make it
- Beat together cream cheese, 2/3 cup of sugar and 1/2 tsp vanilla until fluffy.
- Gradually add the egg and beat until smooth.
- Spray a 9" pie plate with nonstick spray and pour in cream cheese mixture. Bake at 350 F for 30-35 minutes or until puffy and light brown around the edges.
- Cool on wire rack for 10 minutes.
- Combine sour cream, remaining sugar and vanilla and spread over cheesecake. Bake at 350 F for 15 minutes longer.
- Cool completely on a wire rack and then refrigerate.
- At serving time, top each slice with 2 tbsp cherry pie filling.
