Easy Piquant Muffins Recipe
These are a snap to make in a pinch. See variations! Great as a "sopping up" bread for savoury stews, chili, etc. These freeze beautifully.

Ingredients
  • 2 cups biscuit mix
  • 1 pkg instant salad dressing mix ... ranch, lemon-garlic, italian, you name it
  • 1 extra large egg
  • 2/3 cup milk
  • 2 Tbsp vegetable oil
  • Butter
  • Sesame seeds (optional)

Directions
  1. Preheat oven to 350F.
  2. Grease a 12-cup muffin pan.
  3. Measure biscuit mix into a bowl. Add salad dressing mix and blend lightly with a fork.
  4. Beat egg, milk and oil together lightly and add to biscuit mix. Beat vigorously for 30 seconds. Spoon into prepared muffin pan, filling cups about 2/3 full.
  5. Put a dot of butter on top of each muffin and sprinkle with sesame seeds, if using.
  6. Bake for 25 to 35 minutes or until golden. Serve warm.
  7. *Variations: throw in some grated cheese, cooked crumbled bacon, chopped chives or green onions ... have fun with this one!
