Pork Diane Skillet Supper

- 4 tbsp butter or margarine shopping list
- 2 lb pork tenderloins, cut crosswise into 1/4-inch shopping list
- 3 1/2 cups chicken broth, divided shopping list
- 1 1/2 tbsp worcestershire sauce shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 16 small red potatoes, quartered shopping list
- 1 cup sliced green onions shopping list
- 2 cups sliced fresh mushrooms shopping list
- 4 tbsp flour shopping list
How to make it
- In a large skillet or dutch oven, melt butter over medium-high heat. Cook pork 3-5 minutes or until browned on both sides. Remove pork from skillet and set aside.
- Add 3 cups of broth, the Worcestershire sauce, salt, pepper and potatoes to the skillet. Heat to boiling, reduce heat, cover and simmer 13-17 minutes or until potatoes are tender.
- Reserve 4 tablespoons of onions for garnish. Stir remaining onions, mushrooms and pork slices into the potatoes. Cover and simmer about 5 minutes longer, until pork is no longer pink in the center.
- Add flour to reserved broth and blend until smooth. Gradually stir into pork mixture. cook over medium-high heat 2-3 minutes, stirring constantly, until mixture is bubbly and thickened. Sprinkle with reserved onions.
