Braised Lamb Shank In Thirty Minutes Recipe
Lamb in the microwave?? Believe it. This is a recipe I got from the New Basics Cookbook by Julee Rosso and Sheila Lukins and modified. It really comes out shockingly wonderful and no one knows it's been cooked in the microwave unless you tell them.

Ingredients
  • 2 tablespoons plus 2 teaspoons of olive oil
  • 1 cup diced red, yellow, or orange bell pepper
  • 1 cup chopped yellow onion
  • 3 minced garlic cloves
  • 1/2 teaspoon coarse salt
  • ground black pepper to taste
  • 1 cup dry red wine
  • 1 tablespoon tomato paste
  • 3 small lamb shanks

Directions
  1. In a 2 quart, microwave safe casserole dish, cook the 2 tablespoons of olive oil on high (650 to 700 watts) for 2 minutes.
  2. Stir in the bell pepper, onion, garlic, salt, pepper, wine, and tomato paste. Cook uncovered on high for 5 minutes.
  3. Remove half the vegetable mixture and set it aside.
  4. Oil the lamb shanks with the 2 extra teaspoons of olive oil. Sprinkle with coarse salt and ground pepper. Arrange shanks in a triangle over the vegetables in the casserole dish. Cover and cook for 20 minutes.
  5. Turn lamb shanks, cover and cook for 10 minutes.
  6. Spoon reserved vegetables over the shanks and cover and cook for an additional two minutes, then let it rest for at least 5 minutes before serving.
