- 3 teaspoons butter shopping list
- 1 medium onion, chopped shopping list
- 1 bell pepper, chopped shopping list
- 1 clove garlic, pressed shopping list
- 2 cups yellow squash, sliced thin shopping list
- 2 cups fresh corn, cut from the cob shopping list
- 2 tomatoes, peeled and diced shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon seasoned salt shopping list
- 1 pinch sugar shopping list
- black pepper to taste shopping list
- 1/3 cup water shopping list
How to make it
- Butter a 2 1/2 quart (covered) casserole dish.
- In a very large skillet, melt margarine and saute the onion, bell pepper and garlic until soft. Add squash and cook briefly before stirring in corn, tomatoes and seasonings.
- Put mixture into buttered casserole and add water. Cover and bake at 350 degrees for 30 minutes. Uncover and cook an additional 30 minutes.
