How to make it

  • Marinate salmon in mirin, green onion, light miso, sake, soy sauce, and brown sugar. I've put approximate proportions here, but generally just eyeball it to taste. The longer it marinates, the better (at least 1-2 hours, maybe even overnight). However, if you're adding soy sauce be careful because if you marinate too long it will be too salty!
  • Preheat oven to 375' F.
  • Bake salmon uncovered in a dish until flakes easily with a fork. Make sure it goes in moist (i.e. still covered with marinade). You can lay a bed of spinach on the bottom of the dish if you like, to make sure it doesn't stick.
  • Serve over spinach (or some other side vegetable) and rice for a complete meal.
