Corn And Soy Chowder

- 1/2 cup coarse coarse textured soy granules reconstituted with water or vegetable broth or 1 to 1 1/2 cups pkg ready to use soy shopping list
- 2 cups cooked corn ( fresh from the cob, frozen ) shopping list
- 1 small onion diced shopping list
- 1 green bell pepper diced shopping list
- 1 clove garlic minced shopping list
- 1 bay leaf shopping list
- cooked diced potatoes ( optional ) shopping list
- vegetable broth or water ( 6 to 8 cups ) as desired shopping list
- salt and pepper shopping list
How to make it
- In a soup pot with a bit of olive oil saute the chopped peppers, bay leaf and onions till soft over medium heat
- Add the garlic and cook a minutes more
- Now add the corn and soy and cook and stir well.
- Cover with desired amount of chosen broth for thickness
- Bring to a boil and simmer till serving
- Remove bay leaf
- If desired one may also thicken by adding some gravy flour ( usually a few tbs and cook till thick )
- salt and fresh graqted pepper to taste
