How to make it

  • In a soup pot with a bit of olive oil saute the chopped peppers, bay leaf and onions till soft over medium heat
  • Add the garlic and cook a minutes more
  • Now add the corn and soy and cook and stir well.
  • Cover with desired amount of chosen broth for thickness
  • Bring to a boil and simmer till serving
  • Remove bay leaf
  • If desired one may also thicken by adding some gravy flour ( usually a few tbs and cook till thick )
  • salt and fresh graqted pepper to taste
