How to make it

  • Sift flour, salt and baking powder together. Break egg into a 1 cup measuring cup. Beat lightly with a fork. Add milk to make 1 c. Add egg and milk mixture to dry ingredients. Beat a little. Set aside and let stand to rise for about 5 minutes. Drop by spoonfuls onto boiling stew or soup. Cover and boil for 20 minutes.
  • Notes:
  • 1. I use a tablespoon to drop the dough and that makes pretty large dumplings since they expand quite a bit. Usually we have 1 dumpling per bowl. If smaller dumplings are desired, a teaspoon is probably better to use.
  • 2. Herbal seasonings as desired (sage, rosemary, basil, etc.) can be added to the flour mixture before adding the egg/milk mixture.

    With cooler weather just around the corner chicken and dumplings or beef stew with dumplings are a must have.
