Southwest Chicken Soup Recipe
This recipe jazzes up normal chicken soup with a flare.

Ingredients
  • 1 1/4 lb. of skinless, boneless chicken breast halves
  • 1 c. of diced tomatoes
  • 1/2 c. of chopped onions
  • 1/2 c. of chopped celery
  • 1 diced avocado
  • 2 tbsp. of taco seasoning mix
  • 1 c. of shredded Cheddar cheese
  • 2 tsp. of ground cumin
  • 1/4 tsp. of ground black pepper
  • 1 c. of water
  • 3 (14 oz) cans of chicken broth
  • 1 tbsp. of chopped fresh cilantro
  • 1 tbsp. of vegetable oil
  • 1 c. of crushed tortilla chips

Directions
  1. First preheat oven to 350 degrees.
  2. Then lay chicken pieces on baking sheet and sprinkle with taco seasonings.
  3. Let this cook 30-35 min.
  4. Cool and shred.
  5. Now add olive oil to a pot over medium flame.
  6. Saute the onions and celery until tender.
  7. Now sprinkle the cumin, pepper, and rest of taco seasoning.
  8. Let these flavors simmer for aprox. 30 min.
  9. Now add in the tomatoes, cilantro, and the chicken ,and let cook approx. 5 more min.
  10. Serve this hot with sliced of avocado and shredded cheese and chips.

Your don't talk about when to add chicken broth in your directions?


I was wondering the same about the stock. I would say in step 8 most likely, to let the flavors simmer together?


Nice flavor and good quick recipe....step 8 is what I did.


Can't say enough about this basic recipe . I had been to an authentic Mexican Restaurant and wanted to try to create the chicken soup at home . The only ingredient I had to add was lime juice with the pulp for a bit a zestyness !! Yuuuummmm thank you so much for sharing with us !!

Alterations


This was EXACTLY what I was looking for !! I must say though .....it became "enhanced " when I added lime juice and pulp . What a ZEST it gave . I am ever grateful for the basic recipe . I also added some roasted garlic in the onion and celery saute.


I also added fresh tomitillos for added flavor but not necessary.


This is EXACTLY what I was looking for . I added lime juice and pulp and it became perfection (from what I had tasted at a recent visit to an authentic Mexican Dinner !!
