How to make it

  • Preheat oven to 425 degree F.
  • Put well drained spinach, beaten egg and nutmeg into bowl. Salt and pepper to taste.
  • Roll pastry to a 12 inch square then cut into 4-6 inch squares.
  • Divide spinach mixture diagonally over half of each square, leaving a 1/2 border. top with Brie slices, using as much as you like. Brush edges of pastry with beaten egg, fold pastry over to form triangle and seal and flute.
  • Transfer triangles to a dampened cookie sheet.
  • Brush tops with beaten egg, make 2 small slits to allow steam to escape, sprinkle with Parmesan cheese.
  • Bake 10 minutes until golden brown. Serve hot or cold.
  • Note- If making appetizers, cut into 3 inch squares instead.
  • Brie can be rather hard to slice because it's so soft. Putting it in the freezer for a half hour will make it easy to slice.

    I love anything with cheese in it. And thats a good tip to put the Brie in the freezer before cutting it.
