This is a dish I learned to make about 30 years ago when I was renting from a fellow who had two teenage boys. This man was a former prison guard and one heck of a great cook! This is the authentic S.F. Joe's Special recipe.

Ingredients
  • 1 1/2 lbs of Ground Chuck or Round
  • 1 or 2 tbl of apple cider or rice vinegar
  • 1 package (10 oz) frozen spinach, cooked, drained and the water squeezed out so it is rather dry
  • 1 small onion chopped
  • 2 tbl good quality curry powder
  • 4 to 6 eggs beaten
  • Salt and pepper to taste

Directions
  1. Saute chopped onions until transparent
  2. Add meat and sprinkle with vinegar, brown
  3. Add curry and mix well
  4. Add spinach, mix well
  5. Add eggs and scramble mixture together untill the eggs are done
  6. Salt and pepper to taste
  7. Serve as is or over white rice.
  8. This may not be the actual recipe from the Bay Area restaurant but I bet it is ten times better and certainly original!!!
