How to make it

  • Combine eggs, sugar, oil, carrots, pineapple and vanilla in a large bowl. Mix well.
  • Combine all dry ingredients together and add to the above wet mixture. Mix well, then add walnuts.
  • Bake in 2 greased and floured loaf pans for 1 hour at 350 degrees. If using dark non-stick pans, lower oven temp by 15 degrees.
