How to make it

  • In a skillet over medium heat, heat olive oil , add turkey & onion, cook until turkey is done. Add all of the vegetables & pinch of thyme, saute for 5-10 minutes. Add vegetable juice & onion soup mix. Salt & pepper to taste. Simmer about an hour. Serve with grated Parmesean on top. Enjoy!
