- 8 single serving firm breads such as sour dough or large kaisers shopping list
- 24 oz ground beef ( preferably lean ) shopping list
- 4 teaspoons olive oil shopping list
- 3 large chopped onions ( enough for 4 cps ) shopping list
- 2 chopped green bell peppers ( enough for 2 cps ) shopping list
- 5 large cloves of garlic, finely chopped shopping list
- 1 cp of finely diced celery shopping list
- 2 tablespoons chili powder shopping list
- 2 cns peeled whole tomatoes ( the 14 oz cns ) shopping list
- 1/2 cp tomato paste shopping list
- 2 cns drained kidney beans ( the 7 oz cns ) shopping list
- 8 oz bag of shredded cheddar cheese shopping list
- Handfull of fresh cilantro shopping list
- 8 oz container of sour cream shopping list
- small jar of large stuffed pitted olives shopping list
- Depending on the age of the children and their tolerance to heat, you might want to add a few diced jalapeno peppers shopping list
How to make it
- Saute chopped onions, both kinds of chopped peppers, fine chopped garlic and chopped celery in olive oil till soft. Brown the ground beef in another pan. Put both into a large kettle and turn on low. Add paste and then slowly add chopped canned tomatoes while stirring till blended. Stir in drained kidney beans and chili powder. Cook on low heat till flavors are blended, about 2 hours.
- Slice a very thin piece off top of each single bread and scoop out center to create separate bowls, using a sharp knife. Spoon in chili. Sprinkle with cheese. Place a small amount of sour cream in weird shape in center and place two olives with the pimento facing up, on top of sour cream to make it appear as eyeballs. Put a small sprig of cilantro under olives and serve while warm.
- The chili can be made the night before and reheated if you need to save time and the insides of the bread can be cut into chunks and toasted in the oven for a later dipping snack or to top off a scary salad.
