Beans Cooked In Tomato

For beans
- 500g dried cannellini beans, soaked overnight shopping list
- 1 red onion, chopped shopping list
- 2 garlic cloves, peeled shopping list
- 1 large carrot, chopped shopping list
- 1/2 celery stick, chopped shopping list
- 10 sage leaves shopping list
- 1 bay leaf shopping list
For sauce
- 10 sage leaves shopping list
- 2 garlic cloves, peeled and crushed shopping list
- 300g tomatoes (skinned and chopped) shopping list
- 1/2 small dried red chilli, crumbled shopping list
How to make it
- Soak beans overnight.
- Boil beans in with onion, carrot, celery, sage leaves and bay leaf in water for 90 mins.
- Drain beans, reserve a cup of the liquid.
- Lightly fry sage leaves and garlic in olive oil. Add tomatoes and chilli.
- Simmer for 10 mins.
- Add beans and reserved water.
- Simmer for 15 mins.
- Serve for breakfast on a savoury pancake with a poached egg.
