How to make it

  • Soak beans overnight.
  • Boil beans in with onion, carrot, celery, sage leaves and bay leaf in water for 90 mins.
  • Drain beans, reserve a cup of the liquid.
  • Lightly fry sage leaves and garlic in olive oil. Add tomatoes and chilli.
  • Simmer for 10 mins.
  • Add beans and reserved water.
  • Simmer for 15 mins.
  • Serve for breakfast on a savoury pancake with a poached egg.
