How to make it

  • Cook the pasta in boiling, salted water until it is al dente.
  • Meanwhile, put the butter and olive oil in a large skillet over medium heat.
  • As the butter starts to melt, add the minced onion and the red pepper flakes and stir into the butter & oil.
  • When the butter has melted, add the fish to the panand sprinkle the cayenne pepper, black pepper and garlic powder in over the fish; turn the heat up to medium-high.
  • Cook the fish until it flakes easily, turning occasionally.
  • When the fish is cooked, remove the pan from the heat and use a stiff spatula or a fork to break the fish up into bite size pieces.
  • When the pasta has cooked to al dente, drain and return it to the pot.
  • Immediately pour the contents of the skillet over the pasta and stir gently to combine.
  • If needed (or desired), drizzle additional olive oil over the pasta mixture or melt in an additional pat of butter.
  • Top with parmesan cheese, if desired.

    Nice one! I think I'm going to go with the chili oil. I'm always using garlic/oil.
