Spicy Fish Pasta

- 12 oz pasta (any type, I’ve used everything from spaghetti to orecchiette) shopping list
- 1 lb mild white fish (I’ve used cod, tilapia, swai, pollock) shopping list
- 4 tablespoons butter shopping list
- 4 tablespoons chili flavored olive oil (or for a more mild flavor, use garlic flavored olive oil) shopping list
- 1 tablespoon dry, minced onion shopping list
- 1 teaspoon red pepper flakes shopping list
- 1 teaspoon cayenne pepper shopping list
- ½ teaspoon black pepper shopping list
- ½ teaspoon garlic powder shopping list
- grated parmesan cheese (optional) shopping list
How to make it
- Cook the pasta in boiling, salted water until it is al dente.
- Meanwhile, put the butter and olive oil in a large skillet over medium heat.
- As the butter starts to melt, add the minced onion and the red pepper flakes and stir into the butter & oil.
- When the butter has melted, add the fish to the panand sprinkle the cayenne pepper, black pepper and garlic powder in over the fish; turn the heat up to medium-high.
- Cook the fish until it flakes easily, turning occasionally.
- When the fish is cooked, remove the pan from the heat and use a stiff spatula or a fork to break the fish up into bite size pieces.
- When the pasta has cooked to al dente, drain and return it to the pot.
- Immediately pour the contents of the skillet over the pasta and stir gently to combine.
- If needed (or desired), drizzle additional olive oil over the pasta mixture or melt in an additional pat of butter.
- Top with parmesan cheese, if desired.
