Wild Rice Soup

- 6 cups chicken broth shopping list
- 1 cup uncooked wild rice (will yield 3 to 4 cups cooked) shopping list
- 1 cup diced carrots (1/4" dice) shopping list
- 1 cup diced celery (1/4" dice) shopping list
- 1 1/2 cup diced onion (1/4" dice) shopping list
- 4 rashers of bacon,cut into 1/4" strips shopping list
- 1 1/2 cups diced cooked chicken (a rotisserie chicken from the local grocery works really well) shopping list
- 1 clove garlic, minced shopping list
- 4 oz butter shopping list
- 1/4 cup flour shopping list
- 2 cups half and half (not sweetened) or heavy cream shopping list
- 1/4 cup sherry or dry white wine shopping list
- 1 T worcestershire sauce shopping list
- 1 teaspoon cracked black pepper shopping list
- salt to taste shopping list
How to make it
- Cook the wild rice according to package directions drain and reserve rice. Takes about 45 minutes
- In a soup pot saute the bacon until slightly crisp. (don't drain the fat)
- Add the butter to the bacon and melt
- Add the garlic, onion,carrots, and celery. Saute over medium heat for 5 minutes.
- Add the flour to the vegetables, stir in well and cook another 3 to 4 minutes
- Add the chicken broth to the pot
- Bring to a boil and reduce immediately to low simmer.
- Cover and simmer for 30 minutes.
- Add the chicken and wild rice. Heat to 5 minutes.
- Stir in the pepper, wine, and Worcestershire sauce. Heat 5 more minutes
- Stir in 2 cups half and half. Heat for a minute but do not boil.
- Check for seasoning and add salt as needed
- Serve with warm biscuits or rolls
