Chcken Curry

- 1 chicken,about 2-1/2 lbs(cut in pieces shopping list
- 15 dried chilies(or 1-2 tsp. chili powder shopping list
- 1 TB criander shopping list
- 2 tsp cumin seed shopping list
- sprig of curry leaves shopping list
- 1" piece cinnamon shopping list
- 1 TB vinegar shopping list
- 1/2 tsp tumeric shopping list
- 1 onion,sliced shopping list
- 2 green chilies,chopped shopping list
- curry leaves,lemongress(optional) shopping list
- 2 cloves shopping list
- 2 cadamoms shopping list
- 2 c coconut milk shopping list
- 1 TB oil shopping list
How to make it
- Roast chilies,coriander,cumin,curry leaves and cinnamon until golden brown and grind to a paste(or use 2 TB roasted curry powder
- Marinate chicken with salt and lime juice for 1/2 hour. Cut into pieces. .Put chicken into container with ground curry mixture,vinegar,salt and tumeric and marinate for 10-15 mins.
- In saucepan heat 1 TB oil and fry onions,green chilies,curry leaves,lemon grass,cloves and cardamoms. Ad marinated chicken and fry a few mins. Then add 1 c coconut milk and cook on slow fire until chicken is tender. Add the other c of coconut milk and allow to simmer. Add lime juice to taste. Remove from heat when gravy is thick.
- Note:Recipe calls for 1 c thin coonut milk and 1 c thick coconut milk but you can use all the same thickess. Tin a little,if necessary.
