Everyone’s Favorite Mix & Match Creamy Pasta

- 16 oz pasta (any type other than angel hair, vermicelli or thin spaghetti) shopping list
- nonstick cooking spray shopping list
- 1 lb of steak/beef, chicken, shrimp or shrimp & scallops (or any combination), cut into bite sized pieces* shopping list
- 1 package white button or cremini mushrooms, quartered* shopping list
- 1 zuccinni, cut into half moons* shopping list
- 1 yellow squash, cut into small half moons* shopping list
- 1 package grape tomatoes* shopping list
- 1 head broccoli* shopping list
- 1 package baby spinach* shopping list
- 1 small-medium eggplant, cut into bite size pieces* shopping list
- 1 bunch of asparagus, trimmed and cut into 1 inch pieces* shopping list
- 6-8 slices bacon, diced (optional) shopping list
- 2 cloves garlic, grated shopping list
- 1 8 oz container of onion & chive flavored cream cheese (can also use plain, garlic & herb or garden vegetable variety), softened shopping list
- 1 cup milk shopping list
- 1 cup grated parmesan cheese shopping list
- salt & pepper shopping list
- *OPTIONAL – The use of meat or seafood in this dish is optional. You can choose one or a combination (or use something not listed here) or no meat at all. shopping list
- All these vegetables go wonderfully in this dish, but are all optional. They can be used in any combination, one at a time, or you can skip the veggies entirely. shopping list
How to make it
- Cook the pasta in boiling, salted water until al dente; drain & set aside.
- Meanwhile, cook your chosen protein (seasoned with salt & pepper) in a skillet sprayed with nonstick cooking spray.
- Once the protein is finished cooking, remove to a plate and set aside.
- Spray that skillet again and begin to sauté any vegetables you have chosen to use.
- While all that is going on, cook the diced bacon in another skillet, until crispy.
- Remove the bacon, drain most of the fat; hang onto enough just to lightly coat the bottom of your skillet.
- With the bacon skillet over medium heat, grate the garlic into the skillet and cook for 1 minute, then add the cream cheese and stir around to melt it down.
- Add the milk and the grated parmesan cheese and stir to incorporate.
- Add the bacon back into the skillet and stir.
- Season to taste with salt & pepper.
- Keep cooking over medium heat, stirring frequently, until the sauce is smooth and bubbly.
- Remove from heat.
- In a large serving bowl (or the big pasta pot), combine the cooked pasta, cooked meat or seafood (if using any) and cooked veggies (if using any) and toss together.
- Pour the sauce over the pasta mixture and stir gently to coat.
