How to make it

  • In a large skillet, melt butter over medium-high heat. Crack eggs in pan and cook as desired. Just before eggs are done, put a slice of American cheese over each egg.
  • After cheese has melted, place each egg on a toasted slice of bread. Spread mayo on remaining slices of bread and cover eggs with bread. Enjoy!

    Aha! Another fried egg sandwich lover! I just had one today. I toast both sides of my bread, and I break the yolk so it is slightly runny on the interior but not too messy. I screwed up a keyboard with a really runny one a few months back. *blush* Hugs, Anj

    This has always been on my list of favorite sandwich "good eats" but seeing the recipe here reminded me that I hadn't made one for quite a while... I do like to lightly scramble the eggs (or at least break the yolks) to make sure they are cooked through. It also makes the eggs easier to "shape" if you are eating the sandwich on a bakery bun instead of bread.

    This is my childhood on a plate! We had these ALL THE TIME! I was constantly begging for a fried egg sandwich. It's still always the perfect thing for me - any time of day or night! :)
