Frosted Pumpkin Cookies Recipe

How to make it

  • For cookies;
  • Combine all dry ingredients,except sugar,and set aside.
  • Cream together the sugar and butter in mixer till fluffy.
  • Add eggs,and mix till combined,scraping sides of youer bowl,add pumpkin puree and evaporated milk and mix till smooth. If you have lumps,don't worry It will smooth out after adding dry ingredients.
  • Add all dry ingredients and mix till just combined and batter is smooth. Using a piping bag or ziploc bag with corner cut out,pipe 3" rounds of cookie batter onto cookie pans lightly sprayed with Pam.
  • Bake at 375' for 12 mins
  • For icing:
  • Soften butter and cream cheese by leaving out at room temp. or in microwave. Combine all ingredients and cream in mixer until light and fluffy.
  • When cookies cool,frost with a butter knife or pastry spatula.
  • There may have been more than 25. Some disappeared to a friend before I counted them
