Frosted Pumpkin Cookies

- cookies: shopping list
- 2-3/4 c flour shopping list
- 1 tsp baking soda shopping list
- 1 tsp baking powder shopping list
- 1-1/4 tsp salt shopping list
- 1-1/2 tsp cinnamon shopping list
- 1-1/4 tsp powdered ginger shopping list
- 3/4 tsp nutmeg shopping list
- 1-1/2 sticks butter,softened shopping list
- 2-1/4 c lt. brown sugar shopping list
- 2 eggs shopping list
- 14 oz. can pumpkin puree shopping list
- 3/4 c evaporated milk shopping list
- 1 tsp vanilla shopping list
- Icing: shopping list
- 4 oz butter shopping list
- 4 oz cream cheese shopping list
- 8 oz powdered sugar shopping list
- 1 tsp vanilla shopping list
How to make it
- For cookies;
- Combine all dry ingredients,except sugar,and set aside.
- Cream together the sugar and butter in mixer till fluffy.
- Add eggs,and mix till combined,scraping sides of youer bowl,add pumpkin puree and evaporated milk and mix till smooth. If you have lumps,don't worry It will smooth out after adding dry ingredients.
- Add all dry ingredients and mix till just combined and batter is smooth. Using a piping bag or ziploc bag with corner cut out,pipe 3" rounds of cookie batter onto cookie pans lightly sprayed with Pam.
- Bake at 375' for 12 mins
- For icing:
- Soften butter and cream cheese by leaving out at room temp. or in microwave. Combine all ingredients and cream in mixer until light and fluffy.
- When cookies cool,frost with a butter knife or pastry spatula.
- There may have been more than 25. Some disappeared to a friend before I counted them
