For the kraut
- 1 (2 lb) pkg sauerkraut (from the refrigerated section) shopping list
- 1 (4 oz) stick of butter shopping list
- ½ to 1 cup brown sugar shopping list
For the brats
- 2 pkgs (10 pcs) fresh bratwurst shopping list
- 3 large onions, julienned shopping list
- 3 (12 oz) cans beer shopping list
For the bread 'n' fixins
- 10 submarine rolls, split and toasted if desired shopping list
- honey mustard, for condiment shopping list
How to make it
- Drain the sauerkraut and rinse (optional) in a colander. Squeeze as much liquid out of the cabbage as possible. Melt the butter in a skillet over medium heat, and when sizzling add the cabbage into the pan. Scatter the brown sugar over all and stir. Turn the heat down to low.
- Meanwhile, bring the beer to a simmer with the onions and sausage in a kettle over medium heat. Parboil for a few minutes. Then you can either roast the sausages on a grill or place them in a shallow pan in a 350F deg oven, turning several times until nicely browned. Leave the onions in the beer and allow to cook down and caramelize.
- When done, open a submarine roll and make your sandwich in this order: using tongs, place some kraut the length of the roll, then place your bratwurst, some onions, and then honey mustard. Repeat with the remaining ingredients.
