How to make it

  • Heat oil in a large non-stick pan over medium heat.
  • Add the onion and garlic and cook, stirring frequently, until golden, about 8 minutes.
  • Add the tomatoes, tomato paste, wine, sugar, salt, cayenne, and coriander and bring to a boil.
  • Simmer, uncovered, until the flavours are blended and the sauce is slightly thickened, about 20 minutes.
  • Stir in shrimp and parsley, and return to a simmer, cooking until the shrimp are just opaque in the center (about 3 minutes).
  • Serve over cooked linguini.

    I actually make a dish that's very close to this one. I love it! Only difference is that I need to used whole wheat spaghetti.
