Pasta Fra Diavolo With Shrimp

- 2 tsp extra virgin olive oil shopping list
- 1 onion chopped shopping list
- 3 garlic cloves minced shopping list
- 1 28 oz can diced tomatoes shopping list
- 3 tbsp tomato paste shopping list
- 2 tbsp dry red wine shopping list
- 1/2 tsp sugar shopping list
- 1/4 tsp salt shopping list
- 1/2 tsp cayenne pepper shopping list
- 1/2 tsp coriander shopping list
- 3/4 lb peeled, deveined shrimp shopping list
- 1/4 finely chopped fresh parsley shopping list
- 1/2 pound linguini shopping list
How to make it
- Heat oil in a large non-stick pan over medium heat.
- Add the onion and garlic and cook, stirring frequently, until golden, about 8 minutes.
- Add the tomatoes, tomato paste, wine, sugar, salt, cayenne, and coriander and bring to a boil.
- Simmer, uncovered, until the flavours are blended and the sauce is slightly thickened, about 20 minutes.
- Stir in shrimp and parsley, and return to a simmer, cooking until the shrimp are just opaque in the center (about 3 minutes).
- Serve over cooked linguini.

I actually make a dish that's very close to this one. I love it! Only difference is that I need to used whole wheat spaghetti.
