How to make it

  • on large baking sheet toss tomatoes with olive oil to coat,
  • sea salt, black pepper, garlic and basil
  • bake at 250 degrees for 2 hours or untill carmelized
  • remove from oven and scrape into blender (scrape all the carmelized goodness off the pan too)
  • blend until smooth
  • in medium sauce pan combine tomato mixture and chicken broth
  • cook on low heat stirring often for 10 minutes
  • pour into serving bowls and grate a small amount of parmesean on top
