Roasted Tomato Soup

- 10 very ripe plum tomatoes quartered shopping list
- olive oil shopping list
- 3 cloves of garlic, minced shopping list
- 2 tsp of dried basil shopping list
- fresh black pepper shopping list
- sea salt shopping list
- 1 cup of chicken broth shopping list
- freshly grated parmesean shopping list
How to make it
- on large baking sheet toss tomatoes with olive oil to coat,
- sea salt, black pepper, garlic and basil
- bake at 250 degrees for 2 hours or untill carmelized
- remove from oven and scrape into blender (scrape all the carmelized goodness off the pan too)
- blend until smooth
- in medium sauce pan combine tomato mixture and chicken broth
- cook on low heat stirring often for 10 minutes
- pour into serving bowls and grate a small amount of parmesean on top
