Waffle Rarebit

- Waffle batter for 6 waffles, with 1/2 c shredded cheese added shopping list
- 3 c tomato juice shopping list
- 1/2 c flour shopping list
- 1/2 c heavy cream shopping list
- salt & pepper shopping list
How to make it
- Bake cheese waffles in a waffle iron, set aside and keep warm.
- In a double boiler, scald 2 c of the tomato juice.
- Add the flour to the remaining cup of juice and beat until smooth.
- Blend in cream to the flour/juice.
- Pour the scalded tomato juice into the mix, and return to the double boiler.
- Add salt and pepper and cook for 25 minutes.
- Serve over waffles.
