Cajun Chicken Pasta

- Fresh Homemade pasta (recipe on this site already) shopping list
- 4 boneless, skinless chicken breasts shopping list
- 4 teaspoons cajun seasoning shopping list
- 2 tablespoons butter shopping list
- 1 orange bell pepper shopping list
- 1 red bell pepper (optional) shopping list
- 4 fresh mushrooms (or 1 can of mushrooms) shopping list
- 1 green onion sliced shopping list
- 1 1/2 cups heavy cream shopping list
- 1/4 teapsoon dried basil shopping list
- 1/4 teaspoon lemon pepper shopping list
- 1/4 teaspoon salt shopping list
- 1/8 teaspoon garlic powder shopping list
- 1/8 teaspoon ground black pepper shopping list
- 2 tablespoons grated parmesan cheese shopping list
- 1 tablespoon flour or cornstarch for the sauce shopping list
How to make it
- 1. I covered the chicken breasts with Cajun seasoning and put in the fridge covered.
- 2. I had made the pasta dough earlier so all I needed to do was put it through the machine and make the fettucine noodles.
- 3. I did place the chicken breasts in a pan with the butter and seared them and then placed them in a dish and placed in the oven which was preheated 350 F and left them in for about 40 minutes.
- 4. I added the chicken back into a pan, put in the peppers, mushrooms if you want them (I left them out son does not eat them) the green onion, added all the seasonings along with the fresh cream and the flour to help thicken.
- 5. I let it come to a boil and thicken and then added a little more cream.
- 6. And the let it simmer on low heat while I heated the water for the pasta and put that in and served the chicken on a bed of fresh pasta and spooned over some of the sauce. And top with parmesan cheese!
