Chicken And Corn Soup

- 2 teaspoons peanut oil shopping list
- 2 green onions, sliced finely shopping list
- 1 clove garlic, crushed shopping list
- 1 litre (4 cups) chicken stock shopping list
- 1 litre (4 cups) water shopping list
- 170g chicken breast fillets, chopped finely shopping list
- 310g can creamed corn shopping list
- 310g can corn kernels shopping list
- 1 tablespoon cornflour / cornstarch shopping list
- ¼ cup (60ml) water, extra shopping list
- 1 egg, beaten lightly shopping list
How to make it
- Heat oil in large saucepan; cook onion and garlic, stirring constantly, until onion softens.
- Add stock and the water to onion mixture; bring to a boil. Reduce heat, add chicken; simmer, uncovered, about 5 minutes or until chicken is cooked through.
- Add both corns and cornflour blended with extra water. Cook, stirring, until mixture boils and thickens slightly. Gradually add egg, in a thin stream, to simmering soup.
- Sprinkle top with freshly sliced green Shallots if desired.
- Serve On side with a main meal. or with Crusty Bread for a light Brunch.

This is great recipe. Love the ingredients. Rated it a 5. To clarify something. Your corn flour is called corn starch in some parts of the world. This is a keeper recipe.
