Potato Salad With Bacon And Cheese

You will almost always find potato salad at a traditional South African "braai" or as its called else where in the worl a bbq. This salad is a great all rounder and is very tasty.
Ingredients
- 6 boiled and cubed potatoes shopping list
- 1 packet of diced bacon shopping list
- 1 cup of mayonnaise shopping list
- small bunch of chives finely diced shopping list
- 1/2 cup of sour cream shopping list
- 3 hard boiled eggs cut into cubes shopping list
- 1 tsp oreganum shopping list
- salt and pepper to flavour shopping list
- 1 cup of cheddar/ gouda cheese cut into cubes shopping list
- fresh parsley for garnish shopping list
- 1 onion (optional) shopping list
How to make it
- Fry bacon bits and onion together untill bacon is crispy and remove from heat.
- Place cooked potato cubes, eggs, fried bacon, chives and cheese into a large salad bowl.
- Mix together mayonnaise, sour cream, salt, pepper and oreganum and pour over potato mixture. Mix well
- Top with a bit of fresh parsley.
