  • ADD CAYENNE PEPPER, CUMIN, CURRY TURMERIC AND STIR FOR 1 MIN
  • ADD SOYA SAUCE AND APRICOT JAM
  • ADD TOMATO, LOWER HEAT AND SIMMER FOR A FEW MINUTES
  • ADD LENTILS AND MIX LIGHTLY
  • ADD SALT TO TASTE
  • ARRANGE EGGS ON TOP OF CURRY PRIOR TO SERVING
  • SERVE WITH A GREEN SALAD
  • ENJOY :)

    Thank you for this! I too love lentils. I think my affection is based on easy like a pot of soup = a wk of dinner/lunches. And lentils have a very nice flavor, texture, etc. and marry well with lots of wonderful veggies. Love the eggs and curry addition.
