- 1 onion, FINELY CHOPPED shopping list
- 2 cloves garlic, CHOPPED shopping list
- 20 ML oil (NOT olive oil THIS TIME!!!!!) shopping list
- 5 ML soya sauce shopping list
- 2 ML cayenne pepper shopping list
- 5 ML cumin shopping list
- 3 ML mild curry powder (OR IF YOU LIKE IT STRONGER BE FREE AND USE MORE) shopping list
- 5 ML turmeric shopping list
- 5 ML apricot jam shopping list
- 1 LARGE RIPE tomato, PEELED AND CUT IN CUBES shopping list
- 2 ML salt shopping list
- 3 hard-boiled eggs, CUT INTO QUARTERS shopping list
How to make it
- COOK LENTILS ACCORDING TO PACK INSTRUCTIONS
- DRAIN AND KEEP ASIDE
- SAUTE ONION AND GARLIC IN OIL UNTIL TENDER
- ADD CAYENNE PEPPER, CUMIN, CURRY TURMERIC AND STIR FOR 1 MIN
- ADD SOYA SAUCE AND APRICOT JAM
- ADD TOMATO, LOWER HEAT AND SIMMER FOR A FEW MINUTES
- ADD LENTILS AND MIX LIGHTLY
- ADD SALT TO TASTE
- ARRANGE EGGS ON TOP OF CURRY PRIOR TO SERVING
- SERVE WITH A GREEN SALAD
