Buffalo Sirloin With Roasted Potatoes And Mushrooms

- Steaks: shopping list
- 2 Buffalo (Bison) sirloin steaks shopping list
- Salt and Pepper to taste shopping list
- 2 T butter shopping list
- 1/2 tsp worcestershire sauce shopping list
- 1/2 tsp lemon juice shopping list
- 1 T diced parsley shopping list
- Potatoes: shopping list
- 8 small red bliss potatoes, halved shopping list
- 8 baby bella mushrooms, quartered shopping list
- 2 T olive oil shopping list
- S & P to taste shopping list
- Dash of garlic powder shopping list
- Sour Cream Sauce: shopping list
- 1 1/2 cups sour cream shopping list
- 1 T fresh dill shopping list
- 1 T diced parsley shopping list
- 1 tsp cilantro shopping list
How to make it
- Steaks:
- Bison is very lean, so leave any fat on the meat, but cut slices into it to keep it from shrinking
- Season generously with salt and pepper, and allow to sit at room temperature while preparing the rest of the meal.
- When ready, heat cast iron skillet on high, and sear the steaks for about 3 minutes both sides
- Do not use oil or butter
- Finish steaks in the oven when the potatoes have 8 minutes remaining
- Combine butter, parsley, worcestershire sauce, lemon and parsley and melt, to be served on top of the steaks when done
- Potatoes:
- Preheat oven to 450
- Combine all ingredients in a large bowl, and toss until everything is coated with the oil and spices
- Roast for 30 minutes
- Sour Cream Sauce:
- Combine all ingredients and serve on top of roasted potatoes
