Sweet And Spicy Nuts

- 1/4 cup plus 1 tablespoon extra virgin olive oil shopping list
- 1/2 cup granulated sugar, divided shopping list
- 1/4 cup brown sugar shopping list
- 1 tablespoon water shopping list
- 2 teaspoons salt shopping list
- 1 teaspoon cinnamon shopping list
- 1 teaspoon all-spice shopping list
- 1/2 teaspoon ground cloves shopping list
- 1/4 to 1/2 teaspoon cayenne (I used 1/2 teaspoon) shopping list
- 1/4 teaspoon ground ginger shopping list
- 4 cups raw mixed nuts (almonds, cashews, walnuts and pecans work well) shopping list
How to make it
- Heat the oven to 325 degrees F. In a large bowl, toss the nuts with 1 tablespoon olive oil; spread in a single layer on a rimmed baking sheet and bake, stirring occasionally, until lightly browned and roasted, about 15 to 20 minutes. When toasted return to the bowl.
- While the nuts are baking, in a small bowl combine 1/4 cup of the granulated sugar along with the salt, cinnamon, all-spice, cloves, cayenne and ginger. Mix well and set aside.
- In a small sauce pan over medium heat, combine 1/4 cup olive oil, the remaining 1/4 cup granulated sugar and the brown sugar. Stir until well combined then cook and stir for 3 - 5 minutes. Add the water all at once and stir vigorously to combine. Pour over nuts and stir quickly to cover all the nuts in the mixture. Pour the spice mixture into the bowl and stir to coat all the nuts. Pour onto a baking sheet that has been lined with a piece of aluminum foil, spreading and breaking up any clumps. Allow to cool. Keep in an air tight container.
