How to make it

  • ~ For Your Cake ~
  • Toast your pecans and make them fragrant,stirring halfway through the toast, roast...then cool.
  • Beat butter until creamy.
  • Add eggs...on at a time,blending them in well,each time.
  • Combine the flour,soda,salt,and between that,and the buttermilk stir together,but only until blended...dont't beat the crap out of it or it will fail.
  • Stir in the vanilla.
  • Seperate and divide the batter in two portions,add the cinnamon,cloves,and allspice,and the toasted texas pecans in one of these portions.
  • Now,pour the plain batter into two well greased and floured nine inch round pans.
  • Pour the spiced pecan batter into two well greased and floured nine inch round pans.
  • Bake them in a 350 degree preheated oven for about 20 minutes or so..just until a wooden pick inserted in the center comes out clean.
  • Place pans on rack,cool,for about 12 minutes,remove from their surroundings and cool completely.
  • ~ Got Your Fill ~
  • Stir together the orange curd,coconut,orange zest,and juice...blend very well.
  • ~ Icing Make It ~
  • ~Now the fun part~
  • On Grandma's very best cake plate...
  • Lay one plain layer down.
  • Spread top with some filling.
  • Top this with the spiced pecan layer.
  • Spread top with some filling.
  • Repeat with layers,and filling.
  • Topping it off with the spiced pecan layer.
  • Make your white cooked icing.
  • Spread Icing over top and sides of cake.
  • Now... this is were all those twirling lessons that you had as a youth will come in handy...swirl and twirl little pikes peaks all over the cake...then torch them...giving them a slight color...just don't scorch.
  • There is just something about a multi layered cake,to make their eyes widen,and blink with anticipation.
