Steamed Asparagus & Mushrooms

- 1 lb. asparagus spears, cut into 1" pieces shopping list
- 1 T no-salt-added vegetable broth shopping list
- 4 c mushrooms, thinly sliced shopping list
- 1/2 c onion, chopped shopping list
- 1 T garlic, minced shopping list
- 1/4 c fresh lemon juice shopping list
- 2-4 T flaxseed or olive oil shopping list
How to make it
- Prepare fresh asparagus by bending the stalk until it snaps.
- Discard the bottom half and slice the rest on the diagonal.
- Steam the asparagus for about 5-6 minutes until crisp but tender, set aside.
- Heat the broth, mushrooms, onion, and garlic in a nonstick skillet, cooking until soft.
- Add the asparagus, and drizzle with lemon juice.
- Heat the asparagus through over low-medium heat.
- Remove from the skillet to a serving platter and allow to cool.
- Drizzle 1/2 to 1 T flaxseed oil over each serving at room temperature.
