Colorful Potato Soup

- 1 medium finely chopped onion shopping list
- 2 Tablespoons of butter shopping list
- 4 cubes bouillon shopping list
- 4 cups boiling water shopping list
- 1 can of chicken broth shopping list
- 3 cups diced baking potatoes shopping list
- 1 cup grated carrots shopping list
- 1 1/2 teaspoon salt shopping list
- 1/4 teaspoon pepper shopping list
- 2 tablespoons all purpose flour shopping list
- 1 8 ounce carton sour cream shopping list
- 2 tablespoon chopped fresh parsley shopping list
How to make it
- Saute onion in butter in a Dutch oven over medium heat stirring constantly until tender.
- Dissolve bouillon cubes in boiling water.
- Add bouillon and broth to pan: bring to boil
- Add potatoes: cover and simmer 15 minutes or until potatoes are tender
- Combine flour and 2 tablespoons cooking liquid, stirring with a wire whisk until smooth.
- Stir flour mixture into soup mixture; cook , stirring constantly, until thickened and bubbly.
- Reduce heat to low stir in sour cream and parsley.
- Cook until thoroughly heated.
