How to make it

  • Mix the yolks with the sugar. Whisk for 5 minutes.
  • Stir the cream and yolks together and cook over low heat. Do not walk away and don't stop stirring! It should take you about 6 or 7 minutes to get a creamy consistancy.
  • Let this cream cool down and mix in well the pumpkin puree, pumpkin spice, ginger and lemon juice.
  • Put the cream in the fridge for a couple of hours to chill.
  • Follow the instructions of your ice cream maker and finish your ice cream.
  • I served the ice cream with pumpkin compote and it was delicious!!
