My Favorite (and Only!) Scallop Scampi

- 3 Tblsps butter shopping list
- 2 cloves garlic, chopped shopping list
- 1/2 tsp tarragon shopping list
- 1/2 tsp oregano shopping list
- 4 oz baby bay scallops shopping list
- paprika shopping list
- salt and pepper shopping list
- juice of 1/2 lemon shopping list
- 2 tablespoons white wine shopping list
- parsley shopping list
How to make it
- Melt butter in skillet over medium heat. Stir in garlic, tarragon and oregano.
- Add scallops and season with paprika, salt and pepper.
- Squeeze lemon juice over scallops and saute for 2 minutes or until scallops turn opaque.
- Increase heat to medium-high and add white wine. (I removed the scallops so as not to overcook them.) Cook for 1 more minute.
- Return scallops to skillet and plate over linguine.
