How to make it

  • Prepare the sweet and sour dressing by combining all the ingredients and shaking well, and refrigerate.
  • Cook almonds and both amounts of sugar over low heat in a skillet stirring constantly, until all sugar is melted and almonds are coated well, and just golden in colour.
  • Cool on parchment, then break apart.
  • Rinse lettuces and place into salad bowl.
  • Add the chopped onions, and celery.
  • Pour on the dressing, then add the drained mandarin orange segments.
  • Toss all lightly and gently.
  • Place salad onto plates and sprinkle each serving with the sugared almonds, and a slice or two of red onion rings.
