How to make it

  • Marinate shrimp in 2 tablespoons of Sofrito and lemon juice for an hour.
  • Heat oil in a soup pot, and add shrimp along with marinade.
  • Cook until slightly pink. Set aside
  • Add vegetables, spices, and remaining Sofrito.
  • Saute until vegetables are tender.
  • Add water, stock and shrimp.
  • Continue to simmer until shrimp are fully cooked.
  • Serve with a bit of sour cream or queso fresco.
