- 2 T. extra virgin olive oil shopping list
- 1 lb. Uncooked, Deveined, Shelled Extra large shrimp W/ Tails shopping list
- 1.5 Cups raw carrot, Chopped shopping list
- 1.5 Cups Raw celery, Chopped shopping list
- 1.5 Cups Raw Baby Bella mushrooms, Sliced shopping list
- 1 Cup corn kernels shopping list
- 4 Cups vegetable broth shopping list
- 1 Cup water shopping list
- 1/4 Cup Sofrito shopping list
- 1 T. cayenne pepper shopping list
- 1 T. ground cumin shopping list
- 1/8 Cup Chopped Fresh cilantro shopping list
- 1 Dash of sea salt shopping list
- 1 Dash of black pepper shopping list
- juice of 1 lemon shopping list
How to make it
- Marinate shrimp in 2 tablespoons of Sofrito and lemon juice for an hour.
- Heat oil in a soup pot, and add shrimp along with marinade.
- Cook until slightly pink. Set aside
- Add vegetables, spices, and remaining Sofrito.
- Saute until vegetables are tender.
- Add water, stock and shrimp.
- Continue to simmer until shrimp are fully cooked.
- Serve with a bit of sour cream or queso fresco.
