Glazed Cashew Tofu

- 1 lb firm tofu, drained (wrap the tofu in paper towels and weight with a plate to "squeeze" moisture out) shopping list
- 1 Tbs canola oil shopping list
- 1 tsp sesame oil shopping list
- 2 Tbs honey shopping list
- 2 Tbs soy sauce shopping list
- 1 Tbs rice vinegar shopping list
- 1/2 cup cashews shopping list
- green onions, for garnish shopping list
How to make it
- Cut tofu into 2" cubes or crosswise into 1/4-inch thick slices . (The cutlets are good for sandwiches!)
- Combine oils, honey, soy sauce and vinegar, then heat mixture slowly in a large skillet.
- Arrange tofu cubes (or cutlets) in the skillet, then flip to coat with sauce on all sides. Fry tofu over moderately high heat until the tofu is golden and crisp. Add cashews - mix to coat with glaze. Serve Cashew Tofu garnished with green onions.

I make a very similar dish called "Grilled Tofu" but it doesn't have the green onions and the cashews in it. My son says he loves both recipes and to bring this one in to a regular rotation! Thanks!
