How to make it

  • 1. Preheat oven to 425 degrees.
  • 2. Spray a baking sheet with cooking spray.
  • 3. Heat 1 teaspoon of oil in pan over medium heat and add the onion, bell pepper corn and 1 teaspoon cajun seasoning and cook, stirring until the vegetables are soft about 5 minutes. Then remove from heat and allow to cool.
  • 4. Place in bowl and add crab, egg white, 1/2 cup breadcrumbs, mayonnaise and lemon zest. Mix well.
  • 5. Divide the mixture into 8 portions, (you can make them smaller if you wish) and form the mixture into an oblong shape and put to one side.
  • 6. In another bowl place the remaining breadcrumbs and cajun seasoning and mix together and then take the croquettes and place in the crumb mixture and turn and cover and then place on pre greased baking sheet.
  • 7. Bake the croquettes until heated through and golden brown about 20 minutes.

    Ladies. Something Big is Happening!
