How to make it

  • For the pasta sauce
  • Over medium heat, heat oil in a saucepan until hot.
  • Add all ingredients except basil and parmesan cheese.
  • Salt and pepper to taste.
  • Cover and bring to a boil.
  • Lower heat and allow to simmer for 45 minutes with the lid opened slightly.
  • Remove from heat.
  • Stir the basil and parmesan into the sauce and season with salt and pepper.
  • For a smoother sauce, blend with an immersion blender
  • For the chicken
  • Preheat oven to 350 degrees
  • Cook bacon and drain on paper towels
  • Reserve bacon grease in the pan
  • Season chicken breasts with rosemary, poultry seasoning, salt and pepper
  • Dredge in flour, then egg, then flour again and shake off excess
  • Add 1 tablespoon olive oil to bacon grease in the pan
  • Bring up to medium high heat and add the chicken breasts
  • Cook until brown on both sides, about 5 to 6 minutes per side
  • While chicken is cooking, add enough pasta sauce to a glass baking dish to cover the bottom
  • When chicken is done, place in baking dish, add bacon slices to each breast and cover with remaining pasta sauce
  • Top with slices of mozzarella
  • Bake until sauce is bubbly and cheese has melted
  • There should be enough sauce to serve spaghetti or your favorite noodle along side
