Ingredients
  • 1 x quantity pizza dough or 1 large prepared pizza base
  • 2 tablespoons peanut oil
  • 2 small red onions, cut into thin wedges
  • 4 small chicken breast fillets, sliced
  • 1 1/2 cups satay sauce
  • 2/3 cup light sour cream,
  • 1/2 cup roasted peanuts, chopped
  • fresh coriander leaves

Directions
  1. Preheat oven to 220°C. Place rolled pizza dough or prepared base onto a lightly greased baking tray.
  2. Heat a frying pan over high heat. Add oil and onions and cook for 1 minute.
  3. Add chicken and fry for 2 to 3 minutes until golden.
  4. Remove from heat. Stir in satay sauce.
  5. Spoon chicken mixture over base and bake for 15 minutes or until base is golden.
  6. Top with sour cream, peanuts and coriander.
  7. Serve immediately.
