How to make it

  • To Make pudding:
  • Place bread cubes in 8x8 glass pan
  • Heat sugar, evaporated milk, heavy whipping cream in saucepan and bring to a low boil.
  • Stir in chocolate and stir to melt
  • Whisk eggs and slowly add in a stream(while whisking) into milk mixture
  • Remove from heat and pour 1/2 of the mixture over the bread let stand 2 to 3 minutes.
  • Pour remaining mixture over and press bread to ensure all is soaked(and it will be soaked!)
  • Cover with foil and bake for 45 to 50 minutes at 350 degrees
  • While bread pudding is baking make the custard sauce
  • To make custard
  • place milk, sugar,and whipping cream in saucepan and heat to a boil, Remove from heat and stir in chocolate until melted.
  • Whisk yolks and slowly stir into milk mixture in a steady stream while whisking.
  • Return to heat and cook while stirring constantly over low/med heat for 2 to 4 minutes, remove from heat
  • Let stand a couple minutes to thicken
  • Pour custard over the warm bread pudding
  • sprinkle with the almonds(I usually use about a cup)
  • Also, you can garnish with white chocolate shavings and whipped cream.
  • Serve warm bread pudding (cut into squares once cooled or scoop while warm)
