Awesome Almond White Chocolate Bread Pudding

- 1/2 loaf Nature's own butter bread or other soft bread, cut into small pieces(I do not use end pieces of bread)(about 3 to 4 cups) shopping list
- 4 eggs shopping list
- 1 cup sugar shopping list
- 4 squares white chocolate shopping list
- 2 cups evaporated milk shopping list
- 2 cups heavy whipping cream shopping list
- sliced almonds shopping list
- Sauce: vanilla custard shopping list
- 1/2 cup sugar shopping list
- 2 cups evaporated milk shopping list
- 1 cup heavy whipping cream shopping list
- 2 to 3 squares white chocolate shopping list
- 4 egg yolks shopping list
How to make it
- To Make pudding:
- Place bread cubes in 8x8 glass pan
- Heat sugar, evaporated milk, heavy whipping cream in saucepan and bring to a low boil.
- Stir in chocolate and stir to melt
- Whisk eggs and slowly add in a stream(while whisking) into milk mixture
- Remove from heat and pour 1/2 of the mixture over the bread let stand 2 to 3 minutes.
- Pour remaining mixture over and press bread to ensure all is soaked(and it will be soaked!)
- Cover with foil and bake for 45 to 50 minutes at 350 degrees
- While bread pudding is baking make the custard sauce
- To make custard
- place milk, sugar,and whipping cream in saucepan and heat to a boil, Remove from heat and stir in chocolate until melted.
- Whisk yolks and slowly stir into milk mixture in a steady stream while whisking.
- Return to heat and cook while stirring constantly over low/med heat for 2 to 4 minutes, remove from heat
- Let stand a couple minutes to thicken
- Pour custard over the warm bread pudding
- sprinkle with the almonds(I usually use about a cup)
- Also, you can garnish with white chocolate shavings and whipped cream.
- Serve warm bread pudding (cut into squares once cooled or scoop while warm)
