Fresh Fish Pepper Soup

- 2 pounds firm white boneless fish, cut in bite-size pieces shopping list
- 4 cups water shopping list
- 2 tomatoes shopping list
- 1 onion, peeled shopping list
- 3 sprigs fresh parsley (or 1 teaspoon dried parsley) shopping list
- 2 chilies (or jalapeno peppers, seeded) shopping list
- 2 teaspoons salt shopping list
- 1 teaspoon thyme, dried shopping list
How to make it
- Wash fish, place in large saucepan and add 4 cups water.
- Finely chop tomatoes, onion, parsley, and peppers and add to water. Add salt and thyme.
- Bring mixture to a boil over high heat. Reduce heat to low, cover, and simmer for 20 minutes or until fish is tender. Serve immediately.
