Chicken With Mango Barbecue Sauce Recipe

Ingredients
  • 2 Tablespoons Olive Oil
  • 1 Onion, diced (about 1 cup)
  • 1 Red Bell Pepper, diced (about 1 cup)
  • 3 cloves of Garlic, coarsley chopped
  • 1 teaspoon Salt
  • Freshly Ground Black Pepper
  • 1/2 teaspoon Allspice
  • 1/3 cup Red Wine Vinegar
  • 3 tablespoons Molasses
  • 2 Tablespoons Worcestershire Sauce
  • 2 Tablespoons fresh Lime Juice
  • 1/4 cup low-sodium Tomato Sauce
  • 1 fresh Mango, diced (about 1-1/2 cups)
  • 2 Jalapeno peppers, minced (Discard seeds for less "kick")
  • 2 3/4 pound boneless, skinless chicken breasts

Directions
  1. In a medium skillet, heat the oil over medium-high heat.
  2. Add the onion and cook until translucent, about 2 minutes.
  3. Add the bell pepper, garlic, salt, ground black pepper and allspice.
  4. Cook, stirring often, for about 2 more minutes.
  5. Stir in the vinegar, molasses, worcestershire sauce, lime juice and tomato sauce.
  6. Cook for another minute.
  7. Transfer the mixture to a blender.
  8. Add the mango and jalapenos.
  9. Blend until smooth.
  10. Let the sauce cool several minutes.
  11. Transfer 1 cup of the sauce to a Ziploc bag.
  12. Add the chicken, place in glass baking dish in case of a leak.
  13. Let marinate in the refrigerator or 1 hour.
  14. Preheat the broiler.
  15. Put the chicken on a broiler pan and discard the marinade that was in the bag.
  16. Broil the chicken on high for about 12-15 minutes, turning once.
  17. Transfer the chicken to a cutting board and let it rest for 5 minutes.
  18. Slice chicken.
  19. Spoon about 1/2 cup of the sauce over the chicken and serve.
  20. DELICIOUS AND LOW FAT!!!!
