Chicken with Mango Barbecue Sauce

- 2 Tablespoons olive oil shopping list
- 1 onion, diced (about 1 cup) shopping list
- 1 red bell pepper, diced (about 1 cup) shopping list
- 3 cloves of garlic, coarsley chopped shopping list
- 1 teaspoon salt shopping list
- Freshly ground black pepper shopping list
- 1/2 teaspoon allspice shopping list
- 1/3 cup red wine vinegar shopping list
- 3 tablespoons molasses shopping list
- 2 Tablespoons worcestershire sauce shopping list
- 2 Tablespoons fresh lime juice shopping list
- 1/4 cup low-sodium tomato sauce shopping list
- 1 fresh mango, diced (about 1-1/2 cups) shopping list
- 2 jalapeno peppers, minced (Discard seeds for less "kick") shopping list
- 2 3/4 pound boneless, skinless chicken breasts shopping list
How to make it
- In a medium skillet, heat the oil over medium-high heat.
- Add the onion and cook until translucent, about 2 minutes.
- Add the bell pepper, garlic, salt, ground black pepper and allspice.
- Cook, stirring often, for about 2 more minutes.
- Stir in the vinegar, molasses, worcestershire sauce, lime juice and tomato sauce.
- Cook for another minute.
- Transfer the mixture to a blender.
- Add the mango and jalapenos.
- Blend until smooth.
- Let the sauce cool several minutes.
- Transfer 1 cup of the sauce to a Ziploc bag.
- Add the chicken, place in glass baking dish in case of a leak.
- Let marinate in the refrigerator or 1 hour.
- Preheat the broiler.
- Put the chicken on a broiler pan and discard the marinade that was in the bag.
- Broil the chicken on high for about 12-15 minutes, turning once.
- Transfer the chicken to a cutting board and let it rest for 5 minutes.
- Slice chicken.
- Spoon about 1/2 cup of the sauce over the chicken and serve.
- DELICIOUS AND LOW FAT!!!!
