How to make it

  • In large bowl,cream butter and sugar till light and fluffy. Add eggs,one at a time,beating well after each addition. Beat in extract. ombine the flour,baking powder and salt;add to creamed mixture alternately with pineapple juice;beating well after each addition. Fold in coconut,pineapple,macadamia nuts,raisins,mangoes,and candied cherries.
  • Transfer to greased and floured 10" fluted tube pan.
  • Bake at 350' for 50-60 mins or till toothpick comes out clean. Cool for 10 mins before removing from pan to wire rack to cool completely.
  • In small bowl,combine confectioners sugar,milk and extracts. Drizzle over cake.
