Holiday Ambrosia Cake

Adaptation of typical fruit cake. Addition of pineapple,coconut and pineapple juice makes it really moist and gives it a tropical taste.

In large bowl,cream butter and sugar till light and fluffy. Add eggs,one at a time,beating well after each addition. Beat in extract. ombine the flour,baking powder and salt;add to creamed mixture alternately with pineapple juice;beating well after each addition. Fold in coconut,pineapple,macadamia nuts,raisins,mangoes,and candied cherries.
Transfer to greased and floured 10" fluted tube pan.
Bake at 350' for 50-60 mins or till toothpick comes out clean. Cool for 10 mins before removing from pan to wire rack to cool completely.
In small bowl,combine confectioners sugar,milk and extracts. Drizzle over cake.
