How to make it

  • Preheat oven to 250 degrees farenheit.
  • Cut up walnuts, mixed peel, dates, almonds, and glazed cherries.
  • Put the fruit in one bowl with some of the flour to coat.
  • Cream butter, brown sugar, and molasses together.
  • Add eggs one at a time and beat.
  • Add baking soda, cream of tartar, salt, and spices.
  • Add fruit juices from mixed peel and cherries with the vanilla and lemon extract.
  • Add portions of flour and sour milk alternately, beating well between additions.
  • Add floured fruit and nuts to the batter and mix well (with hands).
  • Grease pans, line with one layer of foil or wax paper, grease again, and pour batter within one inch from top.
  • Put pan of water on lower shelf of oven.
  • Bake for 2 to 2 1/2 hours for smalll, up to 4-5 hours for large.

    Wow, it's possible that we are related and that this is the same Christmas cake my grandma used to make. I am the great-grandson of Fred and Catherine (Bennett) Fraser of Revelstoke.
